Eating with Your Hands - Zambian Style

At least twice a week, we eat Zambian food for lunch. The kids really enjoy it, especially because they get to eat with their hands. Today, we had chinese cabbage with our buhobe (nshima). The chinese cabbage (green) is cut into thin strips and cooked with tomatoes, onions, oil and salt. The buhobe is kind of like grits with all the water cooked out. The idea is to make a little ball with the buhobe, push a little indention into it and then pick up the chinese cabbage and eat it all together. Come on over to our house and we'll teach you how to eat it! Yummy!
